Job Description
Seeking an Executive Chef with strong operational and leadership skills. This is a hands-on role managing daily kitchen operations with 10-20 cooks. Daily operation includes 1,000 patient meals per day and physician dining Monday through Friday. The kitchen is completing a state of the art renovation and the selected candidate should be prepared to step in, get the kitchen organized, and lead it to full capacity.

POSITION RESPONSIBILITIES:
Responsible for overall management of the daily food production operations for the Patient Meal Service, Physicians Dining Room, Cafeteria and catering.
Develops menus for all service areas, ensures meets nutritional guidelines, and collaborates with Clinical Staff.
Ensures that food items are received, prepared and stored according to HACCP and regulatory agency standards. Maintains high standards of quality, safety and sanitation.
Ensures all food preparation, display and service areas, are maintained in compliance with all regulatory standards,
Acts as a liaison during Health Inspections.
Responsible for overseeing & assisting with purchasing of food & supplies,
Utilizes cost controls to effectively maintain inventory, minimize waste & meet financial requirements.
Complies with purchasing contracts to meet compliance expectations, makes recommendations for food & supply items to maximize rebates and reduce waste.
Regularly Rounds in all service areas. Visits patients, rounds on staff and in Doctors Dining. Establishes rapport & builds relationships.
Monitors employee attendance for timeliness, accrual of incremental overtime utilizing KRONOS on a daily basis.
Develops staff schedules based on FPC and revise as needed based on PLUS and census to maintain productivity standards
Responsible for interviewing, hiring, training, coaching and counseling of staff in accordance with hospital HR policies.
Responsible for ensuring all required documentation is completed in a timely manner.
Provides education support for staff, ensures necessary certifications are maintained.
Participates on hospital committees and is involved with leadership development programs
Serves as a resource for community events and hospital wide public speaking.
Serves as a preceptor for Externships for Culinary Students and preceptor for Dietetic Internship program.

As observed by manager and others.
Review of documentation.
Patient care and/or department service is delivered in a safe, competent, and efficient manner as determined by outcomes, quality monitors, and other internal and external processes.
Conduct and interpersonal relationships contribute positively to the delivery of quality care and services, and to orderly operation of the department and the facility.
Skills are maintained and enhanced through consultation with interdisciplinary team members, participation in planning activities, and attendance at in-service and continuing education programs.

POSITION REQUIREMENTS/QUALIFICATIONS:
Education:
Culinary degree from an accredited culinary arts program. Minimum of 3 or more years of professional culinary leadership experience

Licensure/certification/registration:
Registered Food Service Manager
Completion of a culinary arts program from an accredited institution.
ACF Certification required within 18 months
Active Member of the ACF preferred
Food Service Managers certification through the Texas Department of Health required.

Experience:
Minimum of 3 or more years of professional culinary leadership experience
Experience in a fast paced large scale setting, fine dining restaurant, hotel or country club.
Healthcare Experience a plus
Comprehensive knowledge of food & catering trends with focus on quality, sanitation, production & presentation.
Experience in Public Speaking preferred
Experience in Budgeting and cost controls

Special Skills & Qualifications
Advanced Communication skills, both verbal and written, as well as presentation skills
Detail Oriented and extremely organized
Public Speaking skills
Strong leadership skills
Staff training and development
Basic to intermediate computer skills, knowledge of Microsoft Office, Excel and PowerPoint
Comprehensive knowledge of all kitchen equipment, advanced knife handling skills.
Advanced culinary knowledge
Bilingual is a plus, but not required.
